My friend Debbie and I discovered them whilst sitting poolside at the spa at Terranea Resort and Spa here in Los Angeles. We devoured them so quickly and both were immediately smitten with these salty, delicious morsels!

The food is spot on at Terranea, and we later had garlic shishito peppers, which were also rather addictive!

Edamame are an excellent choice for healthy snacking as they are high in protein and are low in calories. In fact, my daughter created an easy edamame salad many years ago, which we still enjoy.

Garlic Edamame Recipe

adapted from Terranea Resort and Spa.             serves 4

Ingredients

  • extra virgin olive oil
  • fresh garlic
  • edamame beans, in the shell
  • sea salt
  • fresh lemon wedge(s) – optional

Directions

  • Sauté the minced garlic in a little extra virgin olive oil for a minute or two, then add the edamame beans and sea salt.
  • Mix well, then transfer to the oven for a few minutes until hot.
  • Remove from the oven and drizzle with lemon juice; serve warm for best flavor.

A super delicious and healthy snack.

Ingredients

  • 2 Tbsp olive oil extra virgin
  • 5 cloves garlic fresh, finely minced
  • 14 oz edamame fresh, ready to eat
  • sea salt as desired
  • 1 wedge lemon to squeeze over the top

Instructions

  • Saute the minced garlic in a little extra virgin olive oil for a minute or two, then add the edamame and sea salt.
  • Mix well, then transfer to the oven for a few minutes until hot.
  • Remove from the oven and drizzle with lemon juice; serve warm.

Notes

Add a sprinkle of cayenne pepper for a spicy kick!

  1. Love One Hope wines and all they support! Love Terranea resort and I haven’t been there yet… I am putting this on my list of Must-Dos. Love Sizzling Shaking Beef and can’t wait to try their version of it. In the meantime, I will settle for the delicious looking Garlic and Sea Salt Edamame. Fabulous photos and write up!

  3. Looks like a fantastic place! The lobster sushi and shishito peppers are mouthwatering! I am going to have to pass on the edamame, though, and just have them plain! That much garlic might actually kill me! :)

  5. I’ve only been one for a girlfriend’s weekend and it was spectacular! It is truly a wonderful property! Did you see (or hear) dolphins from your terrace?

    1. No, we didn’t see or hear any sea life this time, Andi, not even a seal! Love the dolphins and seeing whales is a must do for everyone at some point in their lives (IMHO!) :)
