Garlic edamame is a rather addictive, yet nutritious and healthy recipe you’ll want to make often. So much better than chips, or unhealthy snacks, it’s also a great option as an appetizer.

This garlic edamame recipe is so simple, there’s really nothing to it!
My friend Debbie and I discovered them whilst sitting poolside at the spa at Terranea Resort and Spa here in Los Angeles. We devoured them so quickly and both were immediately smitten with these salty, delicious morsels!
The food is spot on at Terranea, and we later had garlic shishito peppers, which were also rather addictive!
Edamame are an excellent choice for healthy snacking as they are high in protein and are low in calories. In fact, my daughter created an easy edamame salad many years ago, which we still enjoy.

Garlic Edamame Recipe
adapted from Terranea Resort and Spa. serves 4

Ingredients
- extra virgin olive oil
- fresh garlic
- edamame beans, in the shell
- sea salt
- fresh lemon wedge(s) – optional
Directions
- Sauté the minced garlic in a little extra virgin olive oil for a minute or two, then add the edamame beans and sea salt.
- Mix well, then transfer to the oven for a few minutes until hot.
- Remove from the oven and drizzle with lemon juice; serve warm for best flavor.

- 1 wedge lemon to squeeze over the top

It’s funny- I lived in San Diego for 28 years and had no idea about this place. It looks like the perfect vacation spot for my husband and me… we love ocean views, amazing spas and that food looks fabulous! I’m thinking it would be a great surprise for our anniversary!
