Crunchy garlic baked pita chips are so good, you might not wait until your pita bread goes stale before you make them!
I hate to waste food, so I’m always repurposing it! Like these pita chips that I made from stale pita bread.

I didn’t need breadcrumbs (and pita bread doesn’t make the best breadcrumbs, anyway) so I decided to cut them up, add some garlic, olive oil and salt, and voilà–a great snack is on hand! These are perfect for scooping up healthy hummus or even tzatziki sauce.
There’s also no rush to eat them as they’ll last much longer than the pita bread would. However, you’ll probably find that they’re a wee bit addictive with the crunch and the garlic flavor combined!
Another way to flavor them is to make them into a sweet snack by using butter instead of oil and cinnamon sugar instead of the garlic and salt. Both are very tasty options! You’ll see how easy they are to make, too!
Crunchy Garlic Baked Pita Chips
recipe by Christina Conte (measurements are not critical)
Ingredients
- some pita bread (the kind which makes a pocket when cut in half)
- extra virgin olive oil
- freshly minced garlic
- Kosher or sea salt
- (optional: garlic salt or granulated garlic powder)
Preheat the oven to 375°F (190°C)
Carefully slice each pita in half horizontally, then cut into eighths using a pizza cutter.
Arrange the pieces on a cookie sheet then put the oil mixture together.
Add the minced garlic, salt, and garlic powder (if using) to the oil and stir together.
Using a pastry brush, brush the bread with the oil on both sides. Just add more oil to the bowl if you don’t have enough. Next, sprinkle the salt and garlic powder on top of both sides of the oil brushed pita pieces.
Place the baking tray (or trays) in the preheated oven and bake for about 4 or 5 minutes. Remove from the oven, turn each chip over and continue to bake for another 5 minutes or so. You can decide how dark and crunchy you like them. This is how I like them~
Allow to cool completely before placing in a tin or sealable bag. Serve on their own or with hummus or your favorite dip.

How long are they good for if kept in a sealed bag?
Hi Michelle, they should be good for at least a week to 10 days, but doubt they’d last that long :) CC
Wasting food is one of my pet peeves also. I made pita chips for a football party, and everyone loved them, they had no idea I repurposed some stale food :)
Excellent, Mary! Good for you! :)
Brilliant idea, Christina. I don’t normally have pita bread but these look so good and handy for hummus etc that I’d buy the pita and wait for it to go stale just to make this! And although the sweet version sounds delicious, I’m going for savoury. Bring on that garlic!
Haha! Thanks, Jill!
Great way to keep using stale pitas! Will definitely keep this in mind for the future.
Cool! Thanks, Julie!
What a nice sub for crackers. Plus, I love garlic on almost anything. Thank you for this simple and cost effective idea!
Yes! They are a great sub for crackers, you’re right! ;)
These look so good! I am a garlic freak so I love that you have highlighted that flavor!
I like the garlic version so much better than plain, Kim!
Yum! Love idea of making your own healthier pita chips.
Thanks!
These pita chips look amazing!
Thank you, Jillian!
I think it will be amazing, even though I can’t make them with garlic. Use pita chips and cheese boards all the time, so why not make them myself?
Absolutely, David! I must say, they taste better than the bought ones, too, as you can imagine!
I love the simplicity and practicality of the recipe!
Thanks, Cathy!
