Cucumbers are one of my favorite vegetables, and they are so delicious in the height of summer, especially when they are homegrown. Here is one of my beautiful cucumbers from my rather sad looking plant.

What Can I do with Lots of Cucumbers?

Every summer, many people end up asking this question, so in response, there are soups, appetizers, sandwiches, side dishes, pickles and even cocktails that can be made using cucumbers. Cucumbers are so refreshing, so try one or more of these recipes the next time you are overloaded, or even if you just have a few to use!

  1. I’m going with the Gazpacho. I have several homegrown tomatoes and cucumbers as well, so this will be the first recipe I’m trying. Like you, I really like vinegar so I’ll be adding extra as well. We’re still hitting the 90’2 here in the Midwest, so this soup will certainly hit the spot. Then I think I’ll go with the garden salad. I need to use my tomatoes and cukes up while they are still fresh and right of the vines. Thanks for sharing.

      1. Sorry you feel snubbed because I wasn’t able to respond to everyone in chronological order. I didn’t realize someone would say I was sexist because I’m really busy. Every time I try to do something nice (the giveaway) there’s someone who has to ruin it for others. Puts me off doing this in future.

  3. I just received several cucumbers from my sister’s garden. I am going to make the Cucumber Avocado Smoothie and also try my hand at the Cucumber Sorbet. That looks too good to be true. The last of the cucumbers are going to be devoted to the Cold Cucumber Soup as I have never seen anything like that and it’s still hot here in NJ to enjoy this. This email slid into my inbox as she called me to tell me about how much she grew and how many I was getting. My apron is on! I am brave enough to go into my kitchen and be a success here. :)
