Cucumbers are one of my favorite vegetables, and they are so delicious in the height of summer, especially when they are homegrown. Here is one of my beautiful cucumbers from my rather sad looking plant.
What Can I do with Lots of Cucumbers?
Every summer, many people end up asking this question, so in response, there are soups, appetizers, sandwiches, side dishes, pickles and even cocktails that can be made using cucumbers. Cucumbers are so refreshing, so try one or more of these recipes the next time you are overloaded, or even if you just have a few to use!
Ways to Use Cucumbers
- Refrigerate slices and use them to cool and refresh tired eyes.
- Pop some slices into a jug of water, with or without lemon slices, to make a hydrating “spa-style” water.
- Add to smoothies.
- And of course, use them in the recipes listed below.
You don’t need any special tools for most of these recipes, but an inexpensive slicer like this OXO hand-held mandoline slicer makes life a bit easier.

Some lovely recipes here, Christina, some of which I’ve enjoyed and others new to me, but they all sound delicious, including the cucumber juice and the sorbet both of which sound really refreshing!
Awesome, Frank! Good luck on the giveway!
I’m going to make the cucumber salad. It’s very hot here, 111° today! 😱
We had 110 two days ago, Judy! Right there with you! Good luck!
I’m going with the Gazpacho. I have several homegrown tomatoes and cucumbers as well, so this will be the first recipe I’m trying. Like you, I really like vinegar so I’ll be adding extra as well. We’re still hitting the 90’2 here in the Midwest, so this soup will certainly hit the spot. Then I think I’ll go with the garden salad. I need to use my tomatoes and cukes up while they are still fresh and right of the vines. Thanks for sharing.
Guess some of us (mostly the guys) aren’t worthy of a response. Too many other worthy food blogs to be perused that don’t snub you. Buh-bye.
Sorry you feel snubbed because I wasn’t able to respond to everyone in chronological order. I didn’t realize someone would say I was sexist because I’m really busy. Every time I try to do something nice (the giveaway) there’s someone who has to ruin it for others. Puts me off doing this in future.
I love the gazpacho and it’s perfect in the heat! Good luck, Dave!
I would make the cucumber tea sandwiches and tzatziki recipes. I look forward to your contest and hope I am a winner. You have lots of wonderful recipes, I like to share with my sister at a distance.
Wonderful to hear, Angela! :)
I just received several cucumbers from my sister’s garden. I am going to make the Cucumber Avocado Smoothie and also try my hand at the Cucumber Sorbet. That looks too good to be true. The last of the cucumbers are going to be devoted to the Cold Cucumber Soup as I have never seen anything like that and it’s still hot here in NJ to enjoy this. This email slid into my inbox as she called me to tell me about how much she grew and how many I was getting. My apron is on! I am brave enough to go into my kitchen and be a success here. :)
Fantastic! Let me know what you think, Linda!
I’m definitely going to make cucumber sandwiches because they’re already my favourite. But I’m going to make Tzatziki to serve with Greek chicken kabobs. Something new to try!
Yes! Great combination, Jo!
This makes me want to add cucumbers to my garden for next year!! We love a good cucumber salad but I’ve always wanted to try Panzanella! I am going to make this and the Korean Cucumbers! Yum! Thank you for sharing your recipes!
I can never have enough cucumbers! Good luck!
We have so many cucumbers! I think I will try the Korean Pickles and the Gin Fizz. Honestly, all of your recipes that I have tried are delicious.
Must try the cucumber sorbet.
Good choice!
Thank you, Jana! Good luck!
