Did you know that ricotta isn’t technically considered cheese?

Ricotta is made with the byproduct of cheese making—so the liquid that you would otherwise discard when making “real” cheese, like raclette. This is then re-cooked until curds are formed, making what we know as ricotta. Ricotta actually translates to “re-cooked” or “cooked again” in Italian.

Growing up, my grandmother would make cheese, and then ricotta, from scratch from time to time. My mother sometimes bought at the store but it’s usually not actually ricotta, but homemade was a different story. If you use store-bought ricotta, these recipes will still turn out deliciously, but find the best quality you have available, like Di Stefano and Murray’s Cheese.
