No bake pineapple dream dessert is a super easy no cook dessert that tastes like something much more time-consuming. Everyone loves these tropical treats which my Aunt Virginia created.

It seems to me that my aunt in Scotland should have been a recipe developer. Everyone who’s tried Aunt Virginia’s no bake pineapple dream dessert made with Digestives (cookies) have become huge fans!

There are so many great dishes that she has created, and all of them are winners, like her lovely Digestive* treats. The following photo is of her actual creation which I took last year. Note that the color of the cream in Scotland is a warmer color, as compared to our US cream. Oh, and can you believe this cream is not even whipped?
So it seems fitting that I share this no bake pineapple and cookie recipe on her birthday! Happy birthday, Aunt Virginia!
*US readers: Digestives are an incredibly popular biscuit (cookie) in the UK. More popular than Oreos! I used them in my British s’mores recipe.
No bake pineapple dream dessert has to be one of the easiest desserts ever made. There’s really no need for a recipe. It’s just a matter of assembling the cookies, pineapple and cream, and truly, a toddler could make these, And if you have pre-whipped your cream, these take a minute to make, literally, one minute! I would add that if you’re making this no bake pineapple dream dessert for adults, a little splash of rum or other liquor (like pineapple vodka), is a marvelous addition.
For best results, place the assembled desserts in the fridge for half an hour or so. The Digestives soften immediately, so if you need to serve them right away, it’s not a problem.
The pineapple rings and Digestives are the exact same size, so this even looks like a perfectly matched dessert.
And would I be posting this no bake pineapple dream dessert if they weren’t absolutely delectable? Of course not! I love these mini desserts and that’s why I asked my Aunt Virginia if I could share them with you! Don’t forget, this is the same Aunt Virginia who gave me the recipe for homemade copycat Bounty/Mounds bars and the bacon and onion stuffed mushrooms!
No one can forget the classic pineapple upside down cake, especially made from scratch!

No Bake Pineapple Dream Dessert
Recipe by Virginia Conte Serves 6

Ingredients
- Digestive biscuits
- pineapple rings (I recommend Dole in 100% juice)
- whipping cream
Step by Step Directions
Whip the cream until stiff (do not add sugar, but if you must, use ½ tsp).
Prepare all the ingredients.
Pour some juice (and rum or other liquor, if using).
Add the pineapple ring.
Place a dollop of whipped cream in the center of each pineapple ring.
Or you can pipe the cream on top.
Aunt Virginia never pipes.
They still look lovely.

No Bake Pineapple Dream Dessert
Ingredients
- 6 Digestive biscuits use McVitie's for best results
- 6 slices pineapple rings in juice
- 1 cup whipped cream whipped
- 1 Tbsp rum or other liquor, optional
Instructions
- Place Digestives on a serving plate.
- Top each one with a pineapple ring and add a little juice to the center. Add some rum or other liquor for adults, if desired.
- Spread or pipe cream into the center of the pineapple and refrigerate until biscuit is soft.
Notes
- I recommend Dole pineapple in 100% juice
- For adults, soak the biscuit with a little rum or your choice of liqueur or spirit, if desired, for a more mature treat.

I love Digestives, I don’t understand why they are so hard to find here. There are forms of them at Mexican and Indian food stores, and in some international sections of other grocery stores, but otherwise hard to get. Such a great and simple treat!
