Yesterday afternoon, without warning, I became ravenous.

I was so hungry, I was starting to get shaky. So I opened the fridge, and to my dismay, there wasn’t some perfect, delectable snack sitting on a plate, waiting to be eaten.
But wait: I spied some leftover sautéed mushrooms, and fresh mozzarella cheese! Oooh, I was getting excited! So this is what I concocted~
Now, do you need a recipe for fresh mozzarella & mushroom toast? Absolutely not, but make sure to use quality ingredients!
Just toast a piece of bread (preferably homemade) then place a couple of slices of fresh mozzarella on the toast, and top with some sautéed mushrooms. (You can totally use any type of mozzarella, or even another type of melty cheese.) I sauté mushrooms with olive oil and garlic, which adds so much flavor, and then season with salt and pepper. You can also freeze them to always have some on hand.
Don’t tell my mum, but you can put this baby in the microwave for a few seconds, until the cheese starts to melt–that’s it! If you don’t have a microwave, just pop it in your toaster oven, or regular oven, under the broiler (grill).

Fresh Mozzarella and Mushroom Toast
A quick and easy mushroom and cheese-lover's snack, light lunch or dinner that is as tasty as it is fast!
Ingredients
- 1 slice of bread, preferably crusty Italian
- one or two slices of fresh mozzarella (or regular mozzarella)
- some sautéed mushrooms
- salt and pepper
Instructions
- Toast the bread to your liking.
- Place the cheese on the bread and melt under the broiler (or in the microwave if you're dying of hunger!)
- Top with the mushrooms, salt and pepper. Heat again to warm the mushrooms and serve.
Notes
I prefer this done under a broiler/grill, but honestly, a microwave is fine. The flavor is always amazing!

Great idea! I’ve made only creamed mushrooms on toast, but the good warm cheese really take this treat to a new level!

I’ve made this a few times and I also use a small baguette cut on an angel and toasted abit , for an appetizer !! So delicious 😋Must try some of you other mushroom recipes
