Chocolate Chip Banana Bread
adapted from my Best Muffin Recipe, Ever makes one loaf

Ingredients
- good quality flour
- baking powder
- baking soda
- pinch of salt
- sugar
- eggs
- olive oil
- unsweetened yogurt
- vanilla extract
- overripe bananas
- dark chocolate chips
Directions
Preheat oven to: 350° F (175° C)
Butter (or spray) and flour a loaf pan.
Place the dry ingredients in a bowl. In a pint sized measuring jug, whisk the eggs, olive oil and yogurt together until well combined. Stir in the vanilla.
Pour this mixture into the dry ingredients.
Next, add the mashed banana, and stir just a few times.
Then add the chocolate chips and continue to stir just until well combined. Do not overmix.
Pour into prepared loaf pan (sprinkle with a few extra chips if you like) and bake for about an hour. Check the loaf with a skewer or cake tester before removing from the oven.
When ready, remove from the oven and allow to cool in the pan for about 15 minutes before placing on a cooling rack to cool completely.
Cut into slices and serve with a cup of hot tea or coffee.
Perfect for lunches, snacks, or even breakfast.

- 2 tsp. baking powder
- 1/2 tsp baking soda
- pinch of salt
- ⅓ cup plus 1 tsp (85 g) sugar
- 2 eggs
- ⅓ cup (80 ml) light olive oil
- ½ cup (125 ml) unsweetened yogurt
- 1 tsp vanilla extract
- 2 medium overripe bananas (200 g), mashed with a fork
- 1 cup (175 g) dark chocolate chips
Instructions

I am going to make this but wanted to know if you prefer the sweetened condensed milk over Dulce De Leche can? I’ve never seen this pie in person so I’ve never tried it either. I’m making it for someone and would like it to come out perfect. This looks delicious.

This is delicious Banana Bread with relatively low sugar. Instead of all Chocolate chips, I added half a cup of choc chips and half of whopped walnuts. It has a lovely light texture too, I will definitely make this again, thank you.

This looks so wonderful. But, I have to tell you, there has not been a banana in this house in probably the 15 years we’ve lived here! No, wait… I made banana cream pie once! Mark hates bananas. Actually it’s not eating them he hates, it’s the smell of them in the house. So, if I wanna banana, I usually have to go onto campus and have it there. He’s got a super sense of smell for those things… (I know you can understand.) One time I had a banana at work for lunch, and he could smell it on me when I got home at the end of the day. I felt like I was cheating! :)
I’m not that bad, but I can totally understand Mark. Once a banana is more than just yellow, I won’t eat it. I’m very particular about banana desserts, but I do eat them. They’re soooo good for us, though! Poor you! haha!

I’ll not take that as an insult, instead I’ll try to convince you to try it! It has no butter, so it’s not a typical banana bread. There’s also very little sugar and no brown sugar, which would give it a little color. You can see in the photos how brown my bananas were as they were used from the same bunch (waaaay past their prime). It’s moist and very tasty and easy to make. If you have followed me for some time, hopefully you’ll trust me and my recipes by now. Let me know, Pauline. :)
