Cheese and Onion Quiche (with Pancetta)
This cheese and onion quiche is a perfect dish to serve for breakfast, brunch, lunch or even dinner. The flavors work so well together, it’s absolutely delicious.
It was fate that I came up with the recipe for this cheese and onion quiche. I had some leftover cheese filling from making my Greek-style tiropita, and thus this recipe was born.

I also had a tart shell that I had to use, and I have to say, I’m glad that things happened as they did that day. I have made this cheese and onion tart several times since then because it’s so tasty and satisfying. It’s a really great dish to make for lunch, or brunch and it freezes particularly well.

You could partially bake the cheese and onion quiche with pancetta (if desired) and then finish baking it when you want to serve it, and it will be fresh, hot and delicious!
This isn’t just a plain old cheese and onion quiche or tart, by the way–it’s made with caramelized onions, three types of cheese and I love to add pieces of pancetta to it (but you don’t have to.) It’s beyond scrumptious, so if you’re choosing between recipes, I vote for this one! Haha!
Cheese and Onion Quiche (with Pancetta)

Ingredients
- olive oil
- OPTIONAL: pancetta
- onion (or shallots)
- feta cheese
- ricotta (or cottage cheese)
- cream cheese
- eggs
- salt
- black pepper
- one savory tart shell (don’t use a sweet pastry), slightly baked for about 8 to 10 minutes
Heat a little olive oil in a sauté pan and add the pancetta pieces.
Cook until it starts to brown, then remove from pan and set aside.
In the same pan, sauté the shallots or onion until caramelized (this should take about 45 minutes or so). Near the end of the cooking time, add the pancetta back in.
Preheat the oven to 375°F (190°C).
While the onions are cooking, place the three cheeses in a bowl and mix in the beaten eggs. Add the pancetta and caramelized shallots/onion and some freshly ground black pepper. Stir until well combined.
Put the cheese and onion quiche mixture into the partially baked tart crust then put into the oven.
Bake the caramelized onion, pancetta and feta cheese tart for about 40 minutes or until golden brown on top.
Allow the caramelized onion and cheese tart to cool slightly and serve warm, or even at room temperature, with a green salad.
Remember, any leftovers of your cheese and onion quiche that you want to save will freeze exceptionally well.

- 10 oz pancetta cut into small pieces (optional)
- 1 large onion sliced, or 5 shallots
- 8 oz feta cheese crumbled
- 1 cup ricotta or cottage cheese
- 8 oz cream cheese softened
- 3 eggs
- ½ tsp salt
- ⅛ tsp black pepper to taste
- 1 savory tart shell slightly baked for about 8 to 10 minutes (don't use a sweet pastry,)
