A nutritious and delicious tuna based salad.

Ingredients

  • 1 cup cannellini beans (cooked)
  • ¾ cup canned tuna (preferably an Italian or Spanish brand)
  • ¼ cup garbanzo beans (cooked)
  • cup red pepper (sweet, diced)
  • 2 Tbsp carrot (diced)
  • 5 black olives (sliced)
  • 3 Tbsp extra virgin olive oil
  • tsp salt (to taste)
  • wine vinegar (to taste)

Instructions

  • Place all the ingredients into a bowl and toss together. Taste, and add more oil, salt and/or vinegar if needed.
  • Spoon into serving bowl and serve with crusty bread, or as a side dish.

Notes

  • Feel free to add and omit similar ingredients to make the recipe your very own.
