Starting with the pepper squares, thread the sausage and veg onto a skewer, ending with a red pepper at the end. Brush with olive oil if desired, but not necessary.
Grill over a hot bbq or under a hot broiler, turning often, until fully cooked.
Serve with rice, a salad, some potatoes or rapini and some fresh, crusty bread.
Notes
Feel free to use other sausage and other vegetable combinations, for example, bratwurst sausages. You can use mushrooms, green and yellow peppers and zucchini slices, too.
