Bacon and Cheese Quiche

A delicious savory tart with bacon (or pancetta), feta cheese and caramelized onion that's perfect for brunch, lunch or dinner.

Equipment

Ingredients

  • 1 Tbsp olive oil
  • 10 oz bacon cut into small pieces or pancetta
  • 1 large onion sliced, or 5 shallots
  • 8 oz feta cheese crumbled
  • 1 cup ricotta or cottage cheese
  • 8 oz cream cheese softened
  • 3 eggs
  • ½ tsp salt
  • tsp black pepper to taste
  • 1 savory tart shell slightly baked for about 8 to 10 minutes (don't use a sweet pastry,)

Instructions

  • Heat olive oil in a sauté pan and add the pancetta pieces. Cook until it starts to brown, then remove from pan and set aside.
  • In the same pan, sauteé the shallots or onion until caramelized (this should take about ½ hour or so).
  • Preheat the oven to 375°F (190°C).
  • Beat the eggs with the salt in a bowl and set aside.
  • While the onions are cooking, place the three cheeses in a bowl and mix in the beaten eggs. Add the pancetta and caramelized shallots/onion and some freshly ground black pepper. Stir until well combined.
  • Put the mixture into the partially baked tart crust then put into the oven.
  • Bake the caramelized onion, pancetta and feta cheese tart for about 40 minutes or until golden brown on top.
  • Allow to cool slightly and serve warm, or even at room temperature, with a green salad.

Notes

  • Leftovers that you want to save will freeze exceptionally well.
