Heat olive oil in a sauté pan and add the pancetta pieces. Cook until it starts to brown, then remove from pan and set aside.
In the same pan, sauteé the shallots or onion until caramelized (this should take about ½ hour or so).
Preheat the oven to 375°F (190°C).
Beat the eggs with the salt in a bowl and set aside.
While the onions are cooking, place the three cheeses in a bowl and mix in the beaten eggs. Add the pancetta and caramelized shallots/onion and some freshly ground black pepper. Stir until well combined.
Put the mixture into the partially baked tart crust then put into the oven.
Bake the caramelized onion, pancetta and feta cheese tart for about 40 minutes or until golden brown on top.
Allow to cool slightly and serve warm, or even at room temperature, with a green salad.
Notes
Leftovers that you want to save will freeze exceptionally well.
