Passion Fruit Cocktail

A light and tropical cocktail that is bursting with passion fruit flavor.

Ingredients

  • 4 oz passion fruit purée or fresh passion fruit pulp (may be harder to source) from 2 passion fruits
  • 2 ice balls or ice cubes
  • 1 oz lemon vodka (I prefer Ketel One citroen vodka)
  • 1 oz simple syrup (more or less, to taste)
  • 12 oz Prosecco DOC or DOCG, preferably (I like La Marca)
  • 2 slices passion fruit (if you have fresh passion fruit, for garnish)

Instructions

  • Scrape the passion fruit pulp into the glasses (or add the strained pulp or purée).
  • Add the ice to the fruit in the glass, and pour in the simple syrup.
  • The vodka goes in next.
  • And finally, pour in the Prosecco.
  • Stir, and if you have fresh fruit, float a slice of passion fruit on the top of each beverage for garnish.

Notes

  • Special equipment: two 12 or 14 ounce wine glasses (make sure your tulip shaped glasses have enough space to accommodate the round ice ball, if using.)
